Thanks for posting my dad's picture for me, I still don't have one of my deer. Will tell you though that if anyone wanted advice on an outfitter or good place to hunt in North West Utah I would highly recommend South Creek Outfitters!.

Sawsman, Good link, that is actually how I normally cut up most all animals, even rabbits, (my favorite meat!) if the nights are going to be cool enough to get the meat down to about 45 degrees we let them hang about three weeks. I believe it helps tenderize and flavor the meat.
